The Receipts · updated jul 2026

Why listen to me? Fair question.

You should audit anyone who gives you advice about your money. Here's my audit, itemized — the wins, the scars, and the stuff you can check yourself.

01 — The journey · 720 Sweets

One small shop. A few thousand dollars.

GM at my parents' Japanese izakaya — my first F&B job2000s
5+ years selling bubble tea at festival markets — the cheap, mobile labpre-2009
First 720 Sweets opens — one shop, a few thousand dollars2009

Peak throughput: 100+ drinks an hour — on systems, not talentpeak

The honest part

The early 720 years included months with $0 income. I saw strong sales and assumed the business was healthy — until the bank account said $1,000, $2,000, sometimes negative. I learned prime cost by being on the wrong side of it. I signed a lease I shouldn't have. I made hires I shouldn't have. The frameworks on this site weren't invented in a workshop — they were paid for in cash, time, and sleep. Mostly mine.

03 — The boardroom

The rooms I sit in now.

Plant Veda — board advisor at a publicly traded F&B company. Public-company governance means the numbers I talk about get audited for real.

Workstream — I work alongside the team at Workstream, the HR/hiring/payroll platform serving 35,000+ restaurant brands, including 46 of the top 50 QSR chains. Full transparency: it's a working relationship, and I name it every time. What it buys you as a reader is a live window into what's actually happening across thousands of restaurant operations — hiring, wages, turnover — not just my own stores. I use it as evidence, never as a pitch.

04 — The students · real comments, unpaid

People who did the thing.

Verbatim YouTube comments from the channel archive — real handles, never invented, never paraphrased. Openings, second locations, business plans finished.
